Dad showed me how to make crab pat pong gari years back. It proves how much more of a Chinese cook he is than a Thai one. Makes sense because he identifies as Cantonese by heritage (even though he’s Thai by upbringing, and American by nationality). Pictured here is Dungeness Crab with our house garlic sauce. When the tomalley is perfect, we serve the crab back alongside to showcase nature’s good work. As Bourdain says, “if God made anything else better, he saved it for himself." Happy to have this on the menu. Happy I can source it from @kelseysachi at @fourstarseafood who gets them directly from the fisherman @chenzos_wayoflife in SF. American Wagyu strip loin. Served with a very savory jaew gastrique, kind of like if Thais had a la A1 style steak sauce but better. We do an oyster sauce brush before it hits the konro, adding to the carmelized char. And then a hit of @saltverk at the end for a bright mineral twang. Shouts to my Nordic salt masters!
